Should I do a wedding theme?

I just recently got engaged and I’m having a hard time getting started with wedding planning. I’m not sure if should go with a theme or just center around a color I like. Some themes relevant to our lives are: the beach, wine, paris (we got engaged there). One theme relevant to me alone is roses (I adored them since I was a baby and they’ve always been my favorite flower). One color I’m in love with is pale blue.

Most of the weddings I attended didn’t have a theme but centered around a color. Any suggestions? A theme seems fun, but following a color makes a wedding seem classier. I have no clue what I should go with.
